Tasty Chocolate Chip Cookies

Everyone likes chocolate chip cookies.

I bake a lot, and sometimes it takes hours to make an elaborate dessert.  But nothing makes my friends and family as happy as when I make chocolate chip cookies.  They’re super easy to make, boringly easy, but the dough is scrumptious and the cookies come out chewy, tender, and chocolatey.  Here’s the recipe I always use.

Courtney’s Chocolate Chip Cookies

INGREDIENTS:

  • 1 stick unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon instant espresso powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/3 cup all-purpose power
  • Big handful of chocolate chips

1. Preheat oven to 375 degrees F.  Using an electric mixer, cream the butter and sugars until they look like the picture below.  Basically, cream for longer than you think you need to.

2. Add the egg, vanilla, espresso, baking soda, and salt.  Stir, then add the flour in 1/2 cup increments, stirring after each addition.

3.  Stir in a big handful of chocolate chips (about 1/2 cup-ish).  Use more if you want more; less if you want less.  Don’t use too much though, or else the chips will melt all over your baking sheet.  Not pretty.  But this dough is definitely lovely.  It’s really good dough, so taste a little if you want.  Err.. or more. 😀

4.  Using a cereal spoon, scoop blobs of dough onto an ungreased cookie sheet.  Tip: wet your (CLEAN) fingertips with water and shape the dough blobs into more uniform circles.  This makes them look prettier.  But frankly, nobody really cares if they’re pretty or not.

5.  Bake for 9 minutes.  The edges of the cookies should be golden brown, and the tops should be puffed up.

6.  After 2 minutes of chilling on the cookie sheet, transfer the cookies to a wire rack.  Let them cool a little more before you taste one.  Once cooled, store in a Tupperware container for up to a week.
