Happy Mother’s Day!


I went out to brunch with my mommy. 🙂


I had a made-to-order omelet with mushrooms, bell peppers and cheddar cheese.  Also I had 1/2 of an everything bagel with a thin layer of cream cheese.  Yum!



Run 1 mile [on the gym’s track… I hate treadmills!]

Swim 55 laps [freestyle]


This was a good workout- I always like to swim after I run because it cools me off quickly.

My dad’s birthday is Friday, and I volunteered to bake him a carrot cake.  Here’s the recipe, which I adapted from so many recipes that there’s no point in giving the sources…

For the Cake:::

3 cups shredded carrots
1 1/2 cup packed brown sugar
1 stick butter, melted

1/2 cup milk
1 teaspoon vanilla extract
3 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt


1. Combine butter, milk, and brown sugar in a large bowl.  Add the eggs and stir until they are all broken up and foamy.

2. Add the carrots and vanilla extract.  Stir to coat the carrots with the mixture.

3. Add flour, baking powder, soda, cinnamon, and salt.  Stir it all together.

4. Pour into 2 greased and floured round cake pans.  Bake in a 350 degree oven for 30-35 minutes.


1 pkg plain cream cheese

1/2 cup softened butter

1/2 cup vanilla Greek yogurt [shout-out to Teens Eat for this idea!]

2 cups powdered sugar

1/2 teaspoon vanilla extract


1. Mix all ingredients together.

2. Spread onto cooled cake.  Make it look as pretty as you want. 🙂
